Luxembourg

Luxembourg flag.

When I picked Luxembourg I knew absolutely nothing about this country other than the fact that it was a tiny country with a ginormous name. It ended up being a bit of a chaotic day, but in the end we enjoyed our taste of Luxembourg.

The plan was to have the entire meal for lunch, but instead we had the main for lunch before some of us ran off into town, and dessert came after our eldest came back from work after dinner. We enjoyed a lunch of pork chops and potato fritters.

Potato fritters

Potato fritters are made by shredding potatoes and mixing them with diced onions parsley, eggs, flour and salt and pepper. These were pressed together and then fried. They were pretty tasty, likely similar to something we’ve made before on our own. We ended up making too much of the mix so we cooked the rest in a muffin tin to enjoy on the go.

This was paired with pork chops. For this we crisped bacon and mixed it with apple sauce, brown sugar, white wine, sauerkraut and spices (we didn’t have the cognac). In this sauce we put pork chops that we had browned and cooked it in the oven for 90 minutes. The kids really weren’t so sure about the ingredients, but once they tried it they all liked it.

Dessert was again one that will be recreated as everyone really liked it. The bottom was a cake pressed into the pan, topped with sliced apples and an egg mix. Served warm is the best way to enjoy this recipe.
